Tanaka Sushi is named after Chef-Owner Tanaka who has loved cooking ever since he was a young boy. Living in both Japan and Korea provided Tanaka authentic opportunities to learn their culinary arts. Tanaka was featured on CBS “Best of Chicago” in 1998 and invited to Kendal Culinary Arts School to demonstrate Japanese cooking. A natural-born cook, Tanaka enjoys developing new food. “Santa Fe Maki” is an example of his unique menu. He created it using a regional product, New Mexican jalapeño, when he owned a restaurant in Santa Fe, NM. It is truly gratifying for Tanaka to watch patrons enjoy his culinary creations.
